Pazham Njurukku (Kerala Dishes)

Pazham nurukku (one of the traditional food of kerala) is the vital part of Onam sadya specially in the Malabar region. This banana desert is steam cooked, so it is healthy at the same time yummy. It is very easy to prepare at the same time does not consume much time.
Ingredients
·         Banana medium sized 2 nos
·         Ghee 3tsp
·         Sugar 1 tsp
Preparation
Put some scratches on the banana (don’t peel it) and cook it in oven for 3 minutes (900W or high). Now the banana becomes soft and the outer skin turns to black color. Instead of the Oven method we can use the conventional Steam-cook method. Peel the skin. Cut the banana into small pieces. Take a pan put the ghee and keep it in medium flame once the ghee is hot put the banana pieces into it and sauté until the color becomes yellowish brown. Now take it from the pan place it in a vessel, spread the sugar on it and close it using a cover. Keep it covered for 15 minutes. That allow the steam to make the pazham njurukku to taste best.

Karimeen Pollichathu/Fish Pollichathu (Kerala Dishes)

This is really easy to prepare and taste yummy. Please try it and give me your feed back.
Ingredients 1
·         Pearl Onion(Chuvannulli) 20
·         Ginger ¼ size of a finger
·         Garlic pods 1
·         Green chilli 2
·         Turmeric powder ½ tsp
·         Red chilli powder 1 tsp
·         Salt as required
Ingredients 2
·         Banana leaf 4 piece
·         Oil for frying
·         Karimeen 4 medium sized
·         Curry leaves 6 stalks
Prepare a paste of ingredients 1. Take half of the paste and rub it all over the fish in and out. Keep it in the refrigerator for one hour for absorb it into the fish. Half fry both sides of the fish in the coconut oil (Put the 2 curry leaves stalk with stem in the oil to avoid sticking of the fish into the pan)and take it.
Now take a plantain leaf put some of the masala paste place the half fried fish on it, above the fish put some masala paste and a curry leaf. Cover the plantain leaf and tie it. Now take pan with coconut oil put wrapped fish into the pan. Keep flame on low, cover it and cook, till it is done.

Fruit Salad (Kerala Dishes)

This is a very tasty fruit salad good for health, which includes fresh as well as dry fruits. Also very easy to prepare and best for kids and adults.
Ingredients 1
·         Banana  2 medium sized
·         Apple 2
·         Mango 2
·         Raisins 50 gms
·         Cashew nut 100gms
·         Cherry 100 gms
·         Pineapple 200 gms
·         Grapes 200 gms black seedless
·         Dates 50 gms
Ingredients 2
·         Sugar ¼ cup
·         Cardamom 4 cloves
·         Lemon ½
·         Water ¾ cup
Add sugar water and lemon juice into a pan and stir it for 10 to 15 minutes, until the mixture sticks while placing on the fingures. Pour the cardamom powder into it and turn off the flame and allow the mixture to cool.
Cut all the ingredients 1 into small pieces and add the sugar mixture on it (Sugar mixture should be cool before pouring on the fruits or else the fruits losses its original taste). Keep it in refrigerator for an hour and serve it with vanilla ice cream.

Recently I got a chance to purchase few churidar set from Strawberry, what the difference I found in that shop was we cannot find two similar sets. Each are different and beautiful, we would be in trouble to select. They are providing stitching as well, so the advantage is if we are having any special pattern in our mind then they will show us the apt material for that pattern. Also if we take one salwar from there then we cannot find similar one among our friends and colleagues. Most of the time if we are taking churidar materials for stitching, then first we will take top and bottom material then search for Shawls or stoles. And what is the result most of the time we may have to either compromise the color or work etc.. But in MILAN we are first gets an opportunity to select the shawls then we will go for the matching material, which I found easy to match. It has got a very good collection, unique elegant and reasonable (price range starts from 400) Varieties like Pasmina, georgette, shiffon, cotton and sils are available. Palada Pradhaman/Palada Payasam (Kerala Dishes)

Palada Pradhaman/Palada Payasam
Ingredients
  • Rice ada 200 gms (njurukku ada or small piece ada is good)
  • Milk 2 liter
  • Sugar 300 gms
  • Ghee 2 tsp
Method
Put rice ada into boiling water and cook for a while (stir occasionally), until it is soft. After it is cooked put it in cold water and rinse it for 2 minutes.
  • Put milk, rice ada and sugar, in a pressure cooker (I used 8Liter Hawkins) and cook in medium heat for 10 minutes, then put the weight of the cooker and cook in medium flame (for 8 to 10 minutes) until cooker releases its first whistle. Turn off the heat and let it remain in the same stove top for 10 -15 minutes.
  • Remove the lid, now the mixture turns to a light creamish pink color.
  • Transfer the mixture to another vessel and stir it, once the mixture becomes thick add ghee (20 to 30 minutes) and turn off the heat.
Notes
  • Palada prathaman can be made in a traditional way by skipping the cooker method. Instead of putting it in a cooker, cook milk, sugar, rice ada until the consistency becomes thick. But itwill take atleast 1 hr to 1 ½ hrs.
  • Preparing palada by cooker saves time and fuel the results are the same.
